Welcome to Anupma’s kitchen. Here we will learn how to make Suji ka halwa. It is a quick and easy recipe and it does not need a lot of ingredients.
Ingredients for Sooji ka Halwa
- 1 cup Semolina
- One Ltr Water
- 1 Cup Sugar
- Pinch of Saffron
- ½ Cup Ghee
- 2 Drops of Pineapple Essence
- Little Cardamom Powder
Suji ka halwa recipe
Let’s start making Suji ka halwa. Keep the flame on medium. Roast the suji (semolina) on a medium flame for at least 5-6 minutes while stirring. A useful tip to make this dessert is to roast the semolina properly.
In the meantime, we will prepare the sugar syrup. Heat water in a vessel. 4 cups of water is used. 1 cup semolina has been used here. The same cup is to be used for water.
Whatever vessel you use to make sure 4 times of that vessel is used for water. Keep the flame on high. Since we are using 1 cup for semolina, we will use 1 cup for sugar as well. Adjust sweetness as per your taste.
This is optional. Gradually cook for some time till the sugar melts. In the meantime, let’s roast & prepare the semolina. After 7-8 minutes, you can see the texture has changed.
You can see that it has been well roasted. The ghee is not melted. Once melted the quantity of ghee increases. If you use oil or melted ghee, then use 3/4th quantity of the same.
Roast the semolina properly with ghee. Roasting the semolina properly will result in a delicious and colourful dessert. Now keep the flame on medium. We will roast for 4-5 minutes, till it gives a light golden colour.
We have chopped some dry fruits here. Quantity of dry fruits depends on your choice. Even if you can skip using dry fruits, the dessert will turn out to be good.
Now let’s check the syrup. The sugar has melted. We will not caramelize the sugar. Only cook till the sugar is melted. Put off the flame and cover for some time. It should be hot while we pour it into the semolina.
With the flame on low, we have roasted the semolina with ghee for 7-8 minutes. You can see the colour has slightly changed. At this point, we will put all dry fruits, so that dry fruits are fried along with the semolina.
It will help to avoid roasting the dry fruits separately. When the semolina has been properly roasted with the flame on low, you can see the texture. The semolina has been properly roasted.
At this point, add some raisins. Raisins are not to be added initially as they cook quickly. Now cook gradually for 10-20 seconds. Now pour the syrup carefully. Lower the flame.
Now keep stirring slowly on low flame. As it boils, the dessert will become thick. Keep stirring on the medium flame. We have gradually cooked for 2-3 minutes.
Now you can see the dessert has become thick. Lower the flame at this point. Cover and let it cook for 5 minutes so that the semolina is cooked properly. We will cook the dessert at low flame for 4-5 minutes.
You will observe that the dessert looks delicious, and the aroma has spread everywhere. Mix everything properly. Do not increase the flame. Let me give you a tip here which will make the dessert flavorful and tasty.
Add pineapple essence in the dessert. You can also add kewra water or rose essence or vanilla essence. But pineapple essence will give a perfect flavour. Now the Suji ka halwa will have a perfect consistency.
Once cooled, it will thicken more. At this point, we will turn off the flame or else it will turn thicker. Our dessert is now ready. Keep it aside for some time and serve it with more dry fruits.
