How to make Sondesh
Ingredients needed for making of Sondesh:
- 1/2 gallon (8cups) milk
- 1/4 cup lemon juice
- 1/2 cup sugar
- 1/4 teaspoon ground cardamom
For Garnish we need:
- 2 tablespoon sliced pistachios
- About 8 strands of saffron
- 2 tablespoon crushed pineapple
Preparation of Sondesh
Sondesh is a Bengali delicacy served as a dessert. Sondesh is made with freshly made paneer and sugar. This recipe will make 24 pieces with the above-mentioned ingredients. To make paneer we will boil the milk and stir it frequently so it does not burn from the bottom.
When milk is boiling we will add the lemon juice. The water will get separated. Don’t overcook otherwise paneer will become tough. When the paneer is separated then close the stove/gas. Drain the water using the strainer lined with cheesecloth and run some cold water over it.
It takes out the flavor of lemon juice from it. Squeeze out the water paneer is ready. Now first we have to knead the paneer for 2 to 3 minutes till you can form a smooth round ball. Soft and smooth paneer is ready.
To check out if it is done, take a little piece of paneer and just rub it between palms of both hands and form a ball. A nice and smooth ball is formed. Now it’s time to add the half of the sugar, little at a time and the cardamom powder.
Knead it again. While kneading add the rest of the sugar. The dough of Paneer is ready. Now we have to cook this paneer on very low heat for just 5-6 minutes. Just cook enough so that the rawness of the paneer goes away.
If you cook too much then paneer will become a little crumbly. It won’t be smooth. Now you will see that the paneer is started to come together. To make that happen we need to make sure we keep stirring it continuously.
This is a very crucial part of making Sondesh. Again when dough is ready close the stove/gas. We don’t want to overcook it. Remove the dough from the pan so it doesn’t get overheated. Allow to cool down the dough for about 6-7 minutes. As the dough is still warm we will knead it again.
Final preparation of Sondesh
Now the final paneer dough is ready. Divide this dough in about 24 equal parts. It will be a little bit soft and as it gets cool it will get a little dry and hard.
When the dough is divided, make a small round ball of them. Round it with the help of putting them between palms of your both hand and making them round.
Now we have to garnish the Sondesh. For it, we will put 1/2 teaspoon of milk in the saffron and mix it. You will see a kind of paste is ready. First, we will garnish it with pineapple. With the help of your tip of the finger press in the center of the ball.
Put a couple of pcs of pineapple into it. Place a little tap of saffron paste over it. In some of the balls first put the tap of saffron paste and then put some pistachios over it. Repeat this process vice versa. Now the Sondesh is ready to serve.
