Moong dal ki barfi – How to make Moong dal ki barfi, Indian sweets

Moong dal ki barfi is one of the delicious sweets in barfi categories. It is an all-season sweet which is enjoyed by each of the family members at every festive occasion. It also serves as the best and easy dish for you to present to your guests.

The ingredients required for moong dal ki barfi

  • 1 cup fully green gram lentil moong dal
  • 400 ml of canned condensed milk
  • 1 tablespoon of Pistachios and Almonds
  • 1 tbsp cardamom powder
  • 2 Cups of water
  • 3/4 cup ghee/rarefied butter
  • Saffron strands soaked in milk
  • A container in which we will place the barfi with ghee applied on it

Preparation of moong dal ki barfi

Take a heavy bottom pan and keep it on low heat. Dry roast moong dal in it. We need to keep stirring so that the dal is roasted equally from all the sides.

You can smell the aroma of roasted dal and it has turned slightly brown in color. It takes about 2 to 5 minutes to roast the dal. Now we will switch off the stove/gas and when the dal is slightly cool grind it in a mixer. Do not grind too much and it should not be fine.

It should have very small grains of dal. Heat the pan once again and add ghee to it. Keep the heat temperature at low and add grind dal powder into the ghee. Roast the powder for a minute or two. Kindly note that all the cooking should be done on low heat.

You will observe that the dal powder is properly roasted. Now add water and mix it well. Stir it properly so that there should be no lumps. When it is mixed properly then add condensed milk to it and stir it well. Keep stirring it continuously.

We need to keep stirring and scraping so that the mixture does not stick to the bottom of the pan. After it has cooked for 10 minutes, we will add saffron strands that we had soaked in milk. This gives nice aroma and beautiful color as well.

Some people add yellow color but we can avoid it. The saffron strands that you see will also get dissolved gradually. After around 15 minutes of cooking you will observe that the mixture has started leaving sides.

Now switch off the stove/gas and add cardamom powder. Cardamom powder should be added only after the heating was stopped.

Finishing part of moong dal ki barfi

Transfer the content to the container that we had greased it with the ghee earlier. Spread it evenly with the help of spatula or even with the help of your hands too.

Now sprinkle the chopped nuts over the top surface and press it gently with the help of spatula. Allow it to rest for 2-3 hours. When it is set, cut square pieces with help of knife. Gently pick up the pieces when they are still soft and shape them with the fingers.
