Hello friends, welcome to Anupma’s kitchen. Today we will know how to make Malpua recipe. It is a very popular Indian sweet dish.
Lots of people like this Indian sweet and this is very easy to prepare at home. Especially on the occasion of the Holi festival, people make this sweet at home. Now let’s see how to prepare Malpua at home.
- All-purpose flour – 1 1/2 cup
- Water 1/2 cup Milk – 1 1/2cup
- Mawa – 50 gms
- Baking soda – 1/4 tsp
- Fennel seeds – 1/2 tsp (optional)
- Almonds – 6-7 pieces
- Pistachio – 6-7 pieces (for garnishing )
- Ghee for frying
- Sugar – 1 1/2 cup (for sugar syrup)
- Water – 1 cup
- Saffron threads – 10 -15
- Cardamom powder – 1/4 tsp
First, we need to make a mixture of milk and mawa. For that, take a bowl and add mawa to it. Now slowly add milk and mix. You can mix it in a mixture too. It should be a lump-free mixture.
Now we will make the batter for Malpua. For that, take a bowl and add all-purpose flour to it. We will be using a strainer here. Now add baking soda. Strain it so that soda will get mix very nicely with the flour.
Now add 1 tsp ghee to the flour and mix well. When everything got mixed very well, add milk and mawa mixture to it and make a smooth batter for Malpua. Add small batches of milk to the flour and mix.
Do not add milk in one go and add a little at a time and mix well. If you feel the batter is thick for Malpua, add water to the batter and mix. Make a smooth and lump-free batter, just like dosa batter.
When the batter is ready for Malpua, which should be very smooth and have a nice consistency, add fennel seed. If you want, add some dry fruits too. Now mix well. Cover it and keep aside for 15 – 20 minutes.
Till then, we will prepare sugar syrup. Take a pan and place it over the flame, add sugar to it and also add water. Let the sugar dissolve. Mix it well. Once sugar gets dissolved, let the syrup cook for 4-5 minutes.
We do not need any thread consistency for the syrup, but sugar syrup should be sticky. In 5 minutes, sugar syrup will be ready.
To check it, take a drop of sugar syrup on your finger, rub a little; if it feels sticky, the syrup is ready for Malpua. Now switch off the flame.
Add cardamom powder and saffron and mix it well. The syrup is ready. Keep it aside. Now we will fry Malpua. Let the ghee/oil become hot, and then turn the flame low to medium.
Fry all Malpua on low to medium flame. Put the batter in hot ghee/oil. Make Malpua”s size according to your choice. Let it cook for a minute.
Sprinkle or pour some hot ghee on the upper side of it, to get cooked by that side too, and will be easy to flip. After one minute, flip it and let it cook for another side till it gets Golden Brown in color.
It will also get puffed up too. When we fry it on low to medium flame, it gets cooked very nicely, and when we put this in syrup, it will become super soft.
After two minutes, flip it again and fry till it becomes Golden Brown on both sides. It will take 4-5 minutes to get cooked. After this, bring them out, squeeze extra ghee from them by using two spatulas.
The same way fry all of them. When it is ready, dip them in sugar syrup. Malpua and syrup both should be warm.
Leave it for 2 minutes in syrup. After that, bring them out. It will be looking very soft and juicy. Keep them on a serving plate.
