Welcome to Anupma’s kitchen.Today we will learn how to make kulfi.Kulfi is an exotic frozen dessert. It is undoubtedly one of the best sweet treats that the Indian subcontinent has to offer to today’s delicacies.
A) Ingrediants needed to make Kesar Pista Kulfi
- MIlk – One Liter
- Cream/Malai – 3-4 tbsp
- Sugar – 1/2 Cup
- Saffron – Few strands
- Cardomom – 4 -5 pods
- Pistachio – 1 & 1/2 tbsp
- Almonds – 1 & 1/2 tbsp
How to make Kesae Pista Kulfi at Home?
Here we will use full cream milk for better results. 3 to 4 tablespoons of cream or malai. It is optional. Sugar as per your preference. Here we will take about half a cup
A few Saffron strands, 4 to 5 cardamom pods, one and a half tablespoons of pistachio chopped, and one and a half tablespoons of almond chopped. Now into the pan, we will add the milk.
At high flame, stir it gently and wait until it gets a rolling boil. When the milk starts to boil, lower the flame to medium. Now we will take one big tablespoon of this milk and add it to Saffron.
The second thing we have to do is add some cream to it, so I’m going to add about four tablespoons of cream. Here you can also use malai if you wish.
Mix this gently. We have to stir this and reduce this until it gets thick and nice, which will take about 20 minutes or so in the medium to high flame.
Make sure to stir this occasionally to prevent your milk from burning. When milk has reduced to a half, we will add in the Safran milk, followed by Pistachio, Almonds, and the sugar.
It will look colorful and delicious. Stir it and cook this for another five minutes, and then we will let it cool down to room temperature.
After adding the sugar, the mixture may get very runny, but afterward, it will be fine. Switch off the flame and add in the cardamom.
Mix this well, and we will let it cool down to room temperature. So our kulfi mix is ready. Keep it aside, this delicious kulfi mixture.
Now we are going to fill our kulfi molds. Usually, kulfi is cooked a little less, but I like to cook it an extra. So let’s fill all of our kulfi molds.
We are going to keep this in the freezer for about six to eight hours minimum. Our Kesar Pista Kulfi is ready now.
If you want, you can use bamboo sticks or popsicle sticks if you wish after two to three hours. On a hot summer day, it is a delight to have the Kesar Pista Kulfi.
How to make Malai Kulfi with condensed Milk at home?
I’m very excited to be sharing Malai Kulfi with you, so let’s get started. It would be best if you started by pouring 8 cups or 2 liters of milk into a heavy-bottomed pan.
One can of condensed milk and one cup of milk powder. It would be best if you mixed this all up together. One of the secrets to making great Malai kulfi is to use top-quality ingredients.
So you need to use whole cream milk here, and the other secret is the right amount of caramelization of the milk.
Once all the ingredients are properly mixed, you need to raise the heat to be medium and allow the milk to come to a rolling boil.
Once the milk comes to a rolling boil, you need to turn down the heat and allow the milk to cook for about 25 to 30 minutes.
Don’t forget to keep stirring in between to prevent the milk from sticking to the pan’s bottom. As the milk continues to thicken, we are going to stir in about four tablespoons of sugar.
After the sugar dissolves into the milk, we will put in some cardamom powder made from the seeds of about eight to ten cardamom pods.
Add some nutmeg powder, mix it up together, put a little bit of milk into the spice mixture, and mix it up together.
If you add a cardamom powder directly, it might form into lumps, making it difficult to disintegrate into the milk. We are going to stir this back into the milk, mix it up together.
You will observe that the milk is now thick and smooth, and it’s acquired this beautiful caramel color. After the milk cools down, we can pour the thickened milk into the kulfi molds and freeze it till set.
It should take about six to eight hours for the kulfis to set properly. This kulfi is soft creamy and luscious, and to simply put it in one word, and it is irresistible.
