Welcome to Anupma’s kitchen. Today we will learn how to prepare delicious Gajar ka halwa or also known as Carrot halwa. It is a very popular dessert in India.
Ingredients needed to make Gajar ka halwa or Carrot halwa:
This recipe will serve four
- 2 cups of shredded carrots
- 2 cups of milk
- Three tablespoons unsalted butter
- 1/4 cup sugar
- Four chopped roasted cashew nut (for garnish)
Recipe of Gajar ka halwa or Carrot halwa
The recipe I am providing you is serving for four people. We need 1.5 pounds of carrots, i.e., about 2 cups of shredded carrot, which I have already shredded before.
Two cups of milk, three tablespoons of unsalted butter, and 1/4 cup of sugar. Pinch of cardamom powder and about ten cashew nuts split for garnishing the Gajar ka halwa (Carrot halwa).
I have already boiled the milk in the Microwave. It is easier before we start shredding. We will put the milk in the Microwave to boil for about 20 minutes. After every 5 minutes, stop the Microwave and stir it for 1 minute.
Put on the stove on medium heat. So first, we will put 3 tbsp of unsalted butter. After this melts, we need to add the carrot. After the butter melts, we will add the shredded carrot.
Stir this. We will be cooking for about 5 minutes. You will see that colour has started changing towards a little bit brown. While this is cooking, we can roast our cashew nuts to garnish.
Don’t like to put the milk directly with the carrot because from the beginning, because it gets very mushy. I boil the milk separately, and that is the reason I like to use the Microwave.
We don’t have to worry that the milk will spill over. And while we are getting ready with everything else, our milk is also ready. So you can observe that our carrot has started changing the colour.
You will also feel that it is soft. It’s time to add the milk. It will take about 7 to 8 more minutes before the milk is dried, and we will stir this occasionally.
It takes about seven minutes for the milk to dry. Now we will add sugar and mix it well. And again we will be cooking it about a couple of minutes more till the sugar dries up.
We all know that sugar leaves the water. So this has been about 4 minutes after I have added the sugar. So you can see the sugar water has dried up and also started leaving all the sides of the pan.
It means, Gajar ka halwa (Carrot halwa) is ready and its time to add the cardamom. We are going to add one pinch of cardamom powder. Our Gajar ka halwa (Carrot halwa) is ready.
We will garnish it with the roasted cashew nuts that we have roasted earlier. You can serve this delicious and mouthwatering dish at any time.
